This afternoon K had a rough fall and his 5-year-old nephew instantly shouted: "Chitpotang Aloor Dom" (Chitpotang means falling on the back; Aloor Dom - it is a reference from a Bengali poem whose last line states "Paa Peechle Aloor Dom" which translates to "I slip and fall and become like aloor dom" (a dish made from potato)). Though we had a bit of a laugh at that time, K suffered a knee ligament tear.
While K is sulking being confined at one place with a crepe bandage wrapped around his knee, methinks the only thing that can perk up his mood is food.
What better snacks to have on a rainy evening than fritters? And what better mood booster than some sweet fritters? So I decided to prepare Jackfruit fritters for the evening and boy! K lost his sulk!
**Jackfruit Fritters Recipe**
8-10 Jackfruit pods
Semolina 1/2 cup (180 ml cup)
Whole Wheat flour 3/4th cup (180 ml cup)
Pinch of salt
Jaggery as per taste.

Remove the seeds from the Jackfruit pods and squeeze the jackfruit flesh to take out the juice. Once that is done, mix the semolina, whole wheat flour and jaggery with the Jackfruit juice to make a thick paste. Allow the mixture to sit for 20 minutes.
Heat oil in a wok and pour the mix according to the desired fritter sizes. Deep fry them till they turn brown. Drain the excess oil and the fritters are ready to be served.
P.S.: I ran out of rice flour, so I used semolina instead but that didn't affect the taste in any way.
